I read in Creator Help that an openflight terrain file is generated from a DED.  Is there anyway to convert
a DEM file to a format that creator can read?

To import DEM data and create a DED file, Click on Terrain->Build DED…
This will bring up a window.  Click on Add…  Change the “Files of Type” to All Files if your files don’t have the .dem extension.  Select the files and click Open.  Then click Draw Contour and Shading checkboxes.  Set the Output File.  Click Select All.  Click Generate.
